Happy birthday Harry!

Yesterday was a day of secret baking with my best mate Sarah. She asked if we could make this surprise cake for her fiance so we tracked down some number tins for hire from the local cook shop (£3 per tin).  We filled each with a classic victoria sponge mixture (Harry's favourite) and topped with jam, cream and strawberries. Light, sweet and lovely!

Managed to fill each tin adequately with mixture of 250g sugar, butter, flour and 4 eggs. As with the lemon drizzle recipe, it's best to cream the sugar and butter for as long as possible until the mixture is really pale and fluffy to ensure a beautiful, light sponge. We ate this after a delicious steak dinner and people still kept coming back for more. Very happy with the outcome!
